Beetroot Cacao Bites

This recipe originally came from Becci Neuman, and over time, I've made it my own. I’ve tried adding beetroot, swapping out the coconut, changing up the nuts—you name it. But the beetroot version has become my favorite. There’s something about that deep, rich color that makes each bite feel extra special. These bites are perfect as a quick snack or a sweet treat after a meal. You can roll them into bites or flatten them into brownies for a more decadent feel!

Ingredients

  • ¾ cup roasted almonds

  • 15 soft Medjool dates, pitted

  • 1 cup certified gluten-free rolled oats

  • ½ cup shredded coconut (optional, or omit if preferred)

  • 1 tsp vanilla extract

  • 3 tbsp unsweetened cacao powder

  • Pinch of salt

  • 1 large beet, cooked and roughly chopped

  • 1-2 tbsp hot water (as needed)

  • Optional: ¼ cup chocolate chips

  • Optional: extra cacao powder and dried rose petals for topping

Instructions

  1. Prep the Dates: If your dates are not soft, soak them in warm water for about 10 minutes, then drain and pat them dry.

  2. Combine Ingredients: In a food processor or blender, combine the almonds, pitted dates, oats, shredded coconut (if using), vanilla extract, cacao powder, salt, and chopped beet. Blend until everything is well combined, scraping down the sides as needed. The mixture should be slightly sticky; if it’s too dense, add 1-2 tbsp of hot water and blend again.

  3. Add the Chocolate (Optional): If you'd like a bit of extra indulgence, fold in chocolate chips after blending.

  4. Shape the Bites: Roll the mixture into small balls, about 1 inch in diameter. If the mixture feels sticky, wet your hands slightly before rolling. For an extra chocolatey kick, roll the bites in a bit of cacao powder.

  5. Storage: Store the bites in an airtight container in the refrigerator for up to a week or in the freezer for longer storage.

Variations

  • Beetroot Brownies: Press the mixture into a small pan lined with parchment paper, then sprinkle cacao powder and dried rose petals on top. Slice into squares for a lovely brownie alternative!
